3 Easy Overnight Plant-Based Breakfasts!

 A day without breakfast is a day headed in the wrong direction! Why do 31 million Americans skip breakfast? Some say they just aren’t hungry in the morning. Some are too rushed and some think skipping a meal will help them lose weight.

Whatever your story is, there are hundreds of studies that prove you shouldn’t put breakfast on the back burner! 

Breakfast gives you the first boost of energy you need for the day, provides mental focus to avoid brain fog, helps you maintain the ideal body weight and is an opportunity to get some nutrient dense plants into your system each morning! On top of all that it is a great way to super charge your metabolism.

Why not create your breakfast at night when you are making dinner or watching Netflix? Or make several make-ahead breakfasts on a Sunday. They will last all week in your fridge!

These 3 plant-based overnight breakfasts are delicious, fast and will set you up for a productive & energetic day! (They all make one serving)

Chai Chia Pudding

1/2 cup unsweetened dairy free milk

2 Tbsp. chia seeds

1 Tbsp. pure maple syrup

1/4 tsp. cinnamon

Pinch of ground cloves

1 Tbsp raisins

Toppings: diced apple & walnuts

1. Mix up all ingredients except toppings, in a mason jar.

2. Cover and refrigerate overnight!

3. Top with diced apples and walnuts before eating!

Overnight Oats

1/2 cup rolled oats

1/2 cup unsweetened non-dairy milk

1/4 cup unsweetened coconut yogurt

1 Tbsp pure maple syrup

1 tsp chia seeds

1/2 tsp vanilla

Toppings: banana, blueberries and almonds.

1. Mix everything together in a mason jar.

2. Cover and refrigerate overnight!

3. Top with fruit and nuts before eating!

Lemon Chia Pudding

1/2 cup unsweetened non-dairy milk

Zest and juice from one lemon

2 Tbsp chia seeds

1 Tbsp pure maple syrup

Toppings: strawberries, blueberries, slivered almonds

1. Mix up all ingredients except toppings, in a mason jar.

2. Cover and refrigerate overnight!

3. Top with fruit and almonds before eating!
